I dedicate myself to exploring the southern mountains of Oaxaca in search of rare and exotic mezcals among master mezcaleros who sometimes produce only 8 liters, 20-80 on average, and up to 120 with wild agave.
I offer these mezcals in tastings and pairings, detailing the aromas and flavors, both of the mezcals themselves and the surprising combinations that a good pairing allows.
